Gateau rusk

First, we bake a special castella cake with a recipe specifically adapted for making rusks.

We are committed to using freshly laid free-range chicken eggs and have increased the proportion of flour (100% Biei-produced original flour "Biei no Sora") and sugar (organic sugar) to reduce the sweetness. We then mix in linden honey from Hokkaido and bake a batter rich in egg flavor. The moist pound cake is dried overnight to make rusks, and the surface is brushed with fermented butter to create a rich flavor. Finally, organic sugar is sprinkled on top and it is baked once more.

With its light, crumbling texture, the crunch of organic sugar reminiscent of sponge cake, the subtle aroma of butter, and gentle sweetness, accented with a hint of Okinawan salt... Enjoy the natural deliciousness created by the interplay of carefully selected ingredients, without any additives.
