Connecting dreams

Thoroughly engage with the materials.

We decided we wanted to make bread and sweets using domestically produced wheat, and the wheat we finally found was Biei wheat. Thanks to the connections we've made with farmers and milling companies, we were able to revive the production of "Kitano Kaori," which was once in danger of being discontinued, and have it milled in small quantities as a special favor. Our commitment to using only the finest ingredients is at the heart of our craftsmanship.

Experience the unique culinary delights of Biei.

Our shop, which combines Western-style confectionery, bread, and a restaurant/cafe, aims to provide customers with a deeply moving experience of savoring nature itself amidst the magnificent scenery of Biei.
Enjoy our menu, which uses fresh, locally sourced ingredients such as wheat from Mr. Onishi, haskap berries from Mr. Otsuka in Higashikagura, shiitake mushrooms from Mr. Hamada, and vegetables from Mr. Arai.

A dream that connects food and agriculture

By actively using ingredients from Hokkaido, particularly Biei, we hope to let people across Japan know about the richness of Biei's food. We hope this will support the producers who create these high-quality ingredients, and that natural, sustainable agriculture will flourish even more. We hope to contribute, even in a small way, to the food environment 10 or 20 years from now, and work together with you to create a future where "food" and "agriculture" can coexist.

Carefully selected materials

01.

Biei wheat

Wheat is the foundation of deliciousness in sweets and bread.
At Ferme La Terre Biei, we are committed to using wheat grown in Biei Town, Hokkaido, which experiences large temperature fluctuations, and have created three types of original blended wheat flour using "Haru yo Koi" and "Kita Honami" varieties.

"The hills of Biei," "The wind of Biei," "The sky of Biei."
This is a unique flour, named after the scenery of Biei.

Furthermore, we also use the rare "Kitano Kaori" wheat grown by Mr. Onishi, who cultivates his wheat without using glyphosate-based herbicides or neonicotinoid insecticides, prioritizing both the natural environment and the well-being of those who consume it.

This is the delicious taste of wheat nurtured by the land of Biei and the passion of its producers.

02.

Jersey milk

Milk is one of the essential ingredients in baking.
Ferme La Terre Biei uses milk from Jersey cows, a rare breed that accounts for only about 1% of dairy farms in Japan.

This milk is produced by Farms Chiyoda in Biei.
This farm has obtained "Animal Welfare Livestock Certification," which is held by fewer than 20 farms in Japan.

The milk from Jersey cows raised in a free-range environment is rich and flavorful, yet has a clean aftertaste.
It has a flavor that evokes the gentleness of nature.

03.

Seasonal ingredients delivered directly from producers whose faces you can see.

At Ferme La Terre Biei, we value seasonal ingredients grown by producers whose faces we know.

Arai's garlic, Ota's asparagus, Hamada's shiitake mushrooms, Suzuki's Nanatsuboshi rice, Urashima's potatoes, Onishi's wheat...
These ingredients are grown by producers who approach agriculture with passion, while making the most of the unique characteristics of each field and land.

The bounty of the fields, which changes with each season, is all robust and full of the rich flavor of the ingredients themselves.
To allow you to fully experience that deliciousness, we use ingredients delivered directly from producers to make our bread, sweets, and dishes.

This special deliciousness is born from the connection between the land and people of Biei.

This is possible because we are the main store.
Luxurious food and relaxation

sweets

Biei sweets are a great souvenir from Biei, Hokkaido.

We, the producers, take pride in our role in connecting farmers and customers through our confectionery. We consider ways to reduce food waste, such as turning non-standard fruits that would otherwise be discarded into jam. Our artisans put their heads together and strive to contribute to agriculture and the local community. We offer a selection of souvenirs originating from Biei, Hokkaido, made with carefully selected ingredients from Biei and the surrounding areas.

bread

Special bread made with domestically produced wheat

Flour is the heart of bread. We sought out our hometown, Biei, a wheat-producing region, and opened our shop there. We have three original blends of flour made from 100% Biei-grown wheat, which we have named "Biei Wind," "Biei Hills," and "Biei Sky." Our bread is baked through the cooperation of people, flour, and yeast. For the secondary ingredients, we also search for delicious ingredients sourced from Biei and the surrounding areas to create our bread.

Restaurants and Cafes

We offer a special dining experience to savor amidst the breathtaking hillside scenery that only a restaurant in Biei can provide.

As you make your way to the restaurant, the magnificent scenery of the Daisetsuzan mountain range unfolds beyond the hills of Biei. From the restaurant, you can see the fields that symbolize "Biei, the town of hills," and the sunset viewed from the terrace seats is breathtakingly beautiful.
Enjoy your meal or tea time amidst the beautiful scenery.
